Making Sugar on Snow at Home

Ingredients & Tools

  • Slopeside Syrup (preferably amber grade)
  • Fresh clean snow or blend ice in a food processor until it resembles snow
  • Food Thermometer
  • Fork or Popsicle Stick
  • Dill Pickles

Directions

Pour 1 – 2 cups of Slopeside Syrup into a pot and bring to a boil. Let boil for a few minute until syrup reaches 235°. Pack snow into bowl or serving dish. Next, pour a ribbon of hot syrup over the packed snow. The syrup should harden almost immediately into a taffy like consistency. (If syrup does not harden immediately, return it to boil for a few more minutes.) Finally, use a popsicle stick or fork to twist up the hardened syrup and enjoy with a pickle.

Why the pickle?

The sour saltiness of the pickle cuts the sweetness so that one can continue to enjoy the taffy like syrup over and over.
